Tortellini Picnic Salad

You know how you have favorite recipes?  Tortellini Picnic Salad is one of our
family favorites.  I like to make this salad in the summer and fall.
You can buy the cheese tortellini in different colors.  I've even found
the multi-colored cheese tortellini in the orange color
 which is nice for fall. 
This time of year we have so much fresh basil growing
in our garden so it's nice to have another recipe that uses basil.
You can double this recipe for a large crowd. 
Serve with fresh bread and you have a complete dinner.
                                  Tortellini Picnic Salad
                                   12 oz. 3 Cheese Tortellini - Refrigerated section
                                   1 14 oz. can artichokes in water - chopped and drained.
                                   1 cup diced fresh or canned tomatoes
                                   1 cup fresh Feta cheese crumbled.  *Optional
                                   1 can whole black olives drained
                                   Fresh spinach leaves - as much as you want. 
                                   *You can add grilled shrimp or rotisserie chicken if you want. 
                                    1/4 cup white vinegar
                                    1/4 cup green onions chopped
                                    2 or 3 cloves of garlic chopped
                                    8 leaves of fresh basil chopped  (more/less if you want) 
                                               Dried basil also works if fresh is unavailable.
                                    1 tsp. dried dill
                                    1/2 cup olive oil 
                                    Cook tortellini according to package directions then add the 
                                    rest of the salad ingredients.  
                                    Pour dressing over the entire salad. 
                                    If you double the amount of tortellini (I always do!) You don't
                                    have to double the dressing recipe. 
                                    There's plenty dressing for a double batch.
